i believe there aree many quality sport fishing coimpany in bali. there are several things you can do for research, search by the web, call them and talks, and ask around.
Most of the COMPANY / not person - will be able to receive credit card payment that to be able to receive it you must be a company. so thats also a hint for seeking the fishing boat charter company.
i think the most easiest is to call and talk, there you will know how they really know what they are doing or not, and as to my experience, beware to who is promising there will catch big fish - everyone wants big ones , there is no guarante that you will catch this species fish at this minimum weight, but if that is their recent catches, it may be a big possibility they will get it again.
i had a conversation before with a sport fisherman who is the first time visit to bali, a person offers him a very good deal for 3 days tour and promise that they will get black marlin in bali waters, its simple for me, that person does not telling truth or misleading.
as you mentioned you know local rates, it is easier for you to book with one of your references. i believe expensive is not always better, and cheaper is not always better either.
